Production Sous Chef
This position requires a lead from the front mentality; actively working in kitchen while ensuring production needs are being met and quality standards are maintained. Responsible for the day-to-day operation of the entire production facility. This position reports directly to the Executive Sous Chef.
Core Responsibilities
· Supervises all kitchen areas to ensure a consistent, high-quality product is being produced.
· Ensures that all temperature and shrink logs are completed daily.
· Ensures that all opening and closing check lists are completed.
· Ensures that daily and weekly kitchen cleaning checklists are completed.
· Ensures that daily temperature logs of dishwasher are completed.
· Helps maintain overall kitchen cleanliness standards that have been set.
· Works with Executive Sous Chef to plan and execute daily production needs.
· Actively works amongst kitchen staff, producing food and ensuring quality standards are being met.
· Leads from the front, actively demonstrating and coaching associates on proper procedures and protocols.
· Ensures that all new hires are thoroughly trained in all aspects of their respective job requirements.
· Encourages and builds mutual trust, respect, and cooperation among team members.
· Maintains the productivity level of all kitchen staff, ensuring that production goals are being met in a timely manner.
· Work with receiver to properly rotate product to mitigate shrink.
· Monthly inventory management.
· Any other tasks as deemed necessary by the Executive Sous Chef, Operations Manager, or Commissary Director.
